Recently, I had been looking for a good recipe to make a treat to bring my personal chef clients in Mount Lookout and Hyde Park who are gluten free and/or vegan. I was very happy to find a recipe with healthy ingredients from Well Plated by Erin. This bar is easy, and is made without butter, oil, or refined sugar. Also, it tastes delicious! I really appreciated the use of simple, real ingredients, and the options to adapt the recipe to gluten free by substituting gluten free baking blend, or oat flour, and gluten free oats to the recipe. It is easy to make the recipe vegan by subbing out honey for maple syrup or agave nectar, and replacing regular chocolate with dairy free chocolate chips. The result is a moist bar with the homey flavors of peanut butter, chocolate, and oats. I served the bars with some fresh local strawberries from the Covington, Kentucky Farmers Market in early June, and they were a hit!
